Menu Monday

I know it has been a long time since I have posted anything, but things get busy and life gets a hold of you and wont let go.
So here is my latest favorite recipe. But first an advertisement.
I subscribe to this magazine, and I absolutely love one little feature in it. Every month there is a little pull out booklet of 50 things. So for example this month is 50 things to do with pesto, or during the holiday season it was 50 holiday cookies. You get the idea.
So one of the summer months it was 50 burgers. Now I am a fan of the hamburger, and 50 different variations on a burger is like a little bit of heaven for me. I found this on in there and we have been having them a lot, and they are spectacular!
So here it is.
Thai Pork Burgers
For dressing:
1/4 cup lime juice
1 tbsp. fish sauce 1 tbsp. olive oil
salt
sugar
For slaw:
one shaved carrot
one sliced red onion
about a half cup of whole cilantro leaves
For burgers:
1 lb ground pork
1 big pinch salt
chili sauce
mayonnaise
Combine lime juice, fish sauce, olive oil, salt and sugar (to taste). Toss half of dressing with carrots, onion and cilantro and allow to marinate for a while. Make patties with pork and salt and remaining dressing. Grill or broil in oven. Serve on a toasted kaiser roll with chili sauce, mayo, and veggie slaw.
So I know this recipe isn't the most specific in the world but that is the way it is in the little booklet. It is kind of a throw together meal, but I promise it is really good!
